A Semi-Homemade Valentines Day.

Okay so I'm not Sandra Lee... but Dev and I decided it would be kinda fun to have a "Semi-Homemade" Valentines day including the gifts we gave and the food we ate. We hung out in our sweats most of the day, with the exception of when we went and saw 7pounds at the dollar theatre, and we ate a Semi-Homemade dinner on the floor.... :) It couldn't have been more special. Here are some pics from the days events.

I woke up to some Gourmet Truffles, one of my favorites, and a little message written out of conversation hearts (This same message is inscribbed on the inside of my wedding ring <3 )

Devin woke up to this, which included some of his favorite candies and a few cheesy valentines day messages like.... "It's O-Fish-al... I've got a Crush on you."

This is the Semi-Homade BBQ Chicken pizza we made together... it was delish!

The yummy desert cakes I made for our Semi-Homemade Dessert!

Here's the easy Recipe:

Raspberry Cakes For Two

1/2 an 8oz pkg. cream cheese, softened

2 Tbsp. butter, softened

1/4 cup lemon curd

3 Tbsp. powdered sugar

1 4.5oz pkg. prepared shortcakes

1/2 cup fresh raspberries

2 Tbsp. low-sugar raspberry preserves

Fresh Raspberries

small fresh mint leaves

1. For frosting, in small bowl beat cream cheese and butter with electric mixer on medium until smooth. Beat in lemon curd. Add powdered sugar; beat until smooth and fluffy. Set aside.

2. Place two cakes, well side up, on two dessert plates. Divide berries, in a single layer between wells of the two cakes. Spoon 1/2 tablespoon preserves over each. Place remaining cakes, well side down, over filling. Spread frosting on cakes. Serve immediately or refrigerate, loosely covered, up to 48 hours.

3. To serve, stir remaining raspberry preserve; spoon on cake. Top with additional raspberries and mint leaves.

"We have everything we need and I will care for you, 'cause you care for me."
